Yields 10 guests
For the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Citrus Syrup: Combine all the ingredients in a pot, heat until it reaches a simmer, mixing so the sugar melts. After that, take off the burner and leave to cool entirely. Decant into a sterilised bottle, seal and store chilled, where it will keep for around four weeks.
To make Batch Mix: Combine the specified liquids into one sizeable container, leave to sit for an hour, then filter it best through muslin, to ensure it's completely strained.
To serve: Pour 85ml of your cocktail base into a mixing glass filled with ice, and agitate gently for about 60 seconds to cool it down. Strain into a cold coupe glass or a similar vessel, top with some cranberries and finish using a light spray of mandarin oil above the glass.
